There is always an exception to the rule as I have one that I grew out from 2" to 20" in a 180 gal with 2 Tinfoil Barbs, 1 maddy cichlid, 1 FRT and 1 Motoro with no aggression at all

I think it's more accurate to say that jars can grow to over 40 inches. Very rare for one to survive that long and/or find a situation where it can grow that big

Having kept a few as they are my favourite of the Aussies.
In my experience healthy Jar growth rate in a 180 is 20" in 4 years.
If you can house them they will go to 30''+ in 8 to 10 years.

I will probably get one in 4 years after I grad college and keep it in a 180 for 2 year and they up grade to something monster!
