I have had a few JDs in my time. Most have been shy unless provoked. The one I have right now is the smallest fish in my tank yet the bravest. I think it all has to do with the particular fish.

I definitely wouldn't remove the hiding places. That could just stress the fish out.

Try spending more time at the tank. Cichlids seem to recognize their owners and I have found the more familiar they become the more relaxed they are. If there are other distractions in the room however this could be the cause (children, cats, barking dogs, etc).
 
Get him a firemouth buddy! :P
 
My JD's have always been shy.
They only seem to come out to eat or fight.

Most cichlids like low light and something over them.
This is to mimic thier natural envirionment of murky water, and a natural fear of predators from above (birds).

Low light and dithers (silver dollars) would probably help.
They come more for food when they know there is competition.
 
grab some female convicts...there busy lil fish and they might show him its ok to swim around..
 
I'm sure getting some dither fish will bring him out more and like everyone says, spend a good amount of time in front of the tank.
