yeah, its important to check your water and health and all that, but the reason a dempsey has those colours is camoflauge. I have a pair of dempseys in with my CK, and they're afraid of him so they use their camoflauge. It's really quite something to watch; they dart to a plant and turn all green, then they dart to a black rock and turn all black. When they are over sand they turn that tan-ish brown colour that dempseys fade to. I have another dempsey in a tank with brown rocks and a sand bottom and he's always brown.

Particularly with dempseys, who use their colours more for cammo than for mating, it is important to remember this when wondering why they're always changing colour in aquaria. The reason your dempsey faded could be as simple as he noticed the colour of your substrate

male i bred BGJD's and right as i got a male and female they bred in the next month
 
its definately a male, and as long as you have good clean water they will mate all on their own, very hands-free fish those jd's. you dont need to put anything in the tank for them to lay eggs in, they will dig down to the glass and lay them there. good luck
 
didn't realize you had the other fish in with the dempsey's, you may want to watch out for those pictus cats... jd's are a very protective and pretty feirce fish and they will inflict serious damage on your other fish when they breed. also i have seen pictus cats take a beating while eating, they wont think twice about trying to grab the jd eggs, they are a very fast, hungry and daring catfish.

As for color changes, it has to do with dominance or bad water (just because your water is clear, does not mean it's healthy. Ammonia, NitrAtes and NitrItes can not be seen). My breeding pair of BGJD's are the dominant male and female in my tank and they're always dark. She's always black and he's always a purple to black color. The spangling is the greenish blue and gold spots down the sides of the fishes body. Males have more spangling down the body while females have splotches of blue around their gill plates and lower jaw with less spangling down the sides. Though a real nice female will have a little bit of coloring down their sides.

Male theyve always bred pretty easily for maybe ive just been lucky just keep water clean bump up temp a little and feed high protein foods I.e. nightcrawlers, or quality frozen
