Nice JDs. I did a little research and not too much info on the size that they can breed at.
 
i would say 3-4 as well, by five inches, I'd estimate at least a 90% chance. However to get that true blue offspring you are looking for, you need to take a female from this breeding if it occurs, and breed it back to it's original male parent. Sounds disgusting and quite Oedipus in nature, but luckily we are talking about fish here.

In my experience (experience not speculation :D )...

When growing out a group of young Dempseys... The first females to breed begin at 2.5", with the majority of the females being breedable at 3" and a few late bloomers at 3.5"

Add a half inch to each of those numbers for males...

I've heard a rumor of 2" females breeding, but I suspect these are cases where the fish was stunted, therefore it's mature for it's size... But that part is an assumption...
