my advice for kids getting attached to the fish - keep it up kids! bringing an animal into the family is making a commitment, it's good you have them there to remind you of that.
think about it, you get rid of the fish they love because you want something different means you could just as easily get rid of them when you want something different. thereby reducing their sense of security since they may be next. that will lead to them having trouble forming meaningful relationships later on in life, leaving them to die alone.
keep your fish.

I echo the sentiment that you should let your kids keep what they like. It is rare enough that kids these days take passing interest in something other than fads, you have a great teaching moment and life lessons about nature and responsibility.

Just tell your wife the kids want another aquarium

The wife is not gonna allow another tank actually trying to downsize to just two tanks, but yeah I can see keeping the pairs but trying to find compatable tank mates is another story....
