King or queen at stocking

Bboesmani Rainbows. you'll be hard pressed to find anything more colorful active, tough and peaceful. When I get some for my 55, the stocking willl be done.
If you want color, peacefulness and action, there are only three real options for freshwater.
1) Peacock cichlids from Lake Malawi (If you are not scared of Hybrids, you can get generic cheap, and with a sane m/f ratio, you will have minimal aggression.)
2)Livebearers (mollies, swordtails, guppies)
3)Rainbows
Others will argue, but where else are you going to get bright red, blue, green, purple, etc., with fish that don't constantly want to rip each other to shreds?

If you like eartheaters and you need something not too large with lots of colour, I would look at the Central American eartheaters thorichthys.
Thorichthys do well in groups and will breed in a community type setting without the murderous aggressive behaviour of many other central American cichlids.
My personal favourites are thorichthys helleri.

You could have a group of about 8 and add a shoal of livebearers of your choice.

I found this tank to be very enjoyable, with constant breeding lots of colour and relatively harmonious.
 
I agree with Stanzzzz, and group of Thorichthys, or Uruguyan Gymnogeophagus for a 75 gal would work.
But just curious, you say you will buy the tank on Saturday, are familiar with properly cycling a tank before adding fish?
Do you already have seasoned media that you can use, to avoid the cycling process?

Yes I do
My tank is fully cycle
I currently have 5 fishes

Your 30 gallon is cycled. That media wont have enough bb to support a stocked 75. You will cycle if you add all your new fish at once. Youll need to add a few at a time to let the bb adjust to the new load
Ok so I have 5 fish now
I could replace them with 5 new fish

I'll put my new filter on my old tank. Until my new tank is there in Thursday.
Then I'll put both filters on my new tank
