knife blocks sets and cutting boards

Hey, any chefs or ppl who cook alot on here?

Ive been looking into knife sets in a block for my counter top. My uncle and grandpa have been butchers thier entire lives so Ive got som hand me down huge butcher knifes but right now I want a good set. Nothing crazy, I like the all steel ones personally. Ive got some brochures at home for SHUN knives but they are way up in price, Im not a chef, I just cook alot, lots of meat cutting and veggie chopping.

Later I will buy my favorite knife separate in the higher range but as far as an 80 to 150 dollar set for the counter top what have you guys had luck with? Sometimes ross or tj maxx have big brand name sets for way less, amazon too.


Now, bamboo cutting boards or no?

i run a "decent" set of chicago cutlery on the counter. same deal as you. i will pony up some more money as i see fit for mission specific knives, but so far that set has done the job
 
If you're looking for something that's pretty good, I recommend Wusthof Classics. They're pretty durable and above average. I would actually like a set of Globals, but very pricey. I use Wusthof Grand Prix II.
 
cutting board - get a slab of timber, sand it down nice and smooth and just keep coating it with mineral oil. :)
 
Bamboo cutting boards aren't too bad. My knives only touch wood boards. I don't like plastic or fiberglass boards...I use them at work, but I use their knives, lol.

yeah but what are the cons about bamboo boards? Yeah I hate using plastic also.
 
i currently have a bamboo cutting board in my house... my parents bought it about 2 years ago and its stilll in one piece (surprising in a filipino house lol my grandpa can go through two cutting boards in a month lolol)
 
The cons with Bamboo boards is that they need a little more maintenance than wood cutting boards and they tend to splinter if over used. So it's not good for a production kitchen, but the home cooking should hold up fine for a good while.
 
Wood cutting boards = a chance of salmonella and other bacteria contamination as the bacteria can get into the pores of the wood. Wood is difficult to sanitize and will degrade quickly if put into the dishwasher. I use plastic and plastic only. Easier to clean and sanitize, and it is easier on the edge of a knife too.
