How prone are these to jumping out of the tank? I have read stories about them disappearing under ugfs, but nothing about how prone they are to jumping out.

They won't if your tank has plenty of hiding places. They are more adept at hiding than escaping in a similar fashion like bichirs and ropefish.
yeah I used to keep kuhlis and never had a problem with escaping. as long as they get a good hiding spot or two you should be good.
