Large freshwater shrimp ID?

I don't have any yet...I want to mass produce...I can't choose between the Prawns or "RedClaws" which are an huge australian crayuish referred to often as freshwater lobster.

Cherax quadricarinatus. Her's a picture of one in a tank...and one on my plate... I ate about 20 of these things on this cruise... they are awesome!

does arnt cherax what you ate were langostines.
 
I'm not totally sure which ones they were either...But I'm sure they are all very tasty!

I think they all turn pink or red when boiled...so color isn't a way to ID them either.

I have 4 of these guys, they are great. They just babies, I got them for $5 each. They are very aggressive. But Im looking forward to watching them grow. They are aggressive towards each other so you have to have a big tank if you want more then one.
