Would a 125 gallon be ok for a LMB? If not, how long would it be able to stay in the 125 and what is the Min. for an adult? Is room temperature ok for them?

Room temperature is adequate. They're cold water fish. Tank size depends on the size of the fish.
I would catch a baby and then keep it probably. How big would it get in captivity and how large of a tank for an adult?

I raised a large mouth bass when I was a kid and then when it got to big for the tank I took it to my local lake. Good luck and have fun learning all about raising a bass. It is fun.
I can't possibly think of eating a fish which I have raised from a young age. I do it regularly.
I really want to raise some muskies, smoked musky is 10x better than smoked wild caught Alaskan salmon, but I just can't bring myself to keep any muskies I catch, they're too few in number to justify keeping any.
