Boar meat is the best, makes a nice Reuben , some people eat javelina out here, haven't tried it yet, but I like elk, deer and other wild game as well.

I hear boar is the gamiest. Around here they live trap boar or use catch/hog dogs and castrate the boar and pen it up and grain feed about a month before slaughter, said to improve the meat.
I like deer sausage with pork fat added. Very lean by itself.

Gaminess mostly exist in people heads or as a result of overcooking
