Take some beef brisket...cut them into chucks about 1.5 - 2 inches cubes. Soak them in cold water for an hour, dump the bloody water, pat dry
In a wok, sear the pat dry beef in a little oil, add dark soy sauce and light soy sauce and brown sugar and continue to stir fry for 3 more minutes until the meat gain some color. Add five spice powder, star of anise, sliced garlic, and a little more soy. Then add enough water to cover the meat. Add sufficient soy and sugar to your own personal taste. we have used dried hot pepper before for a kick. Cover the pot and turn the heat to medium low to achieve a slow braise for 2-3 hours until the meat is tender(do not cheat on time). Always add enough liquid to keep the meat almost covered. When the meat is done turn off the heat and set aside with the cooking liquid. This can be made ahead of time
Cook noodles in boiling water, when reached al dente, drain noodles. Heat up the beef with the liquid if necessary, chop up some green onions. Put a serving of noodles in a large bowl, Ladle hot beef cooking liquid in the bowl, enough to submerge the noodles. If the liquid is too salty, dilute with a little boiling water. Add several chunks of braised brisket to top, sprinkle some green onion and add a dash of sesame oil, and you got yourself a meal
