How do you get it so the background looks completely black? I would love to be able to take pictures like that.

First of all you need a black background, and the second, you put flash strobes near front glass (top down). Here's a wider angle shot so that you can see where light is:

It's about lighting. You need plenty of light to make it, means you need optimum oriented flash lights so that you can have F20 (+/-) and shutter 1/250s.

The LFS has had small ornates in stock for about the past 6 months, along with albino and normal senegals. Other than that there's not much. About 3 years ago about 10 of each delhezi, palmas and senegal were imported, and a few ornates. There are a few old lower jaw species around that must have snuck in before they clamped down on what you can and can't import.
Now only senegal, ornate, plamas and delhezi are on the 'allowed' list. :(
