Do any of you guys and gals use moon lighting at night?

yes, LED moonlight. Not for the fish, but for me. It acts as a night light for us in the middle of the night.

Can you use lighting hoods that you get in the hardware section of walmart? I guess like shop light type fixtures? Or are they not resistant to the humidity and water of being right above a tank?

On my 125g African cichlid tank I have two 36" bulbs spaning the 6' tank across the front, and a two bulb, 4' fixture behind those fixtures. I use 3 differant kinds of 18,000k bulbs to cover differant spectrums and the fish colors look awesome. The darker top, back corners, caused by the 4' light over the 6' tank, helps de-emphasizing the overflow and inlets and returns.

I have a 75g malawi tank. I've turned over to all real plants, and plan on adding more rock. I currently only have the bulb that my hood came with. I want to add light, but I don't know the whole spectrum thing...what should I get? What kinds do you have and what/how do they benefit?
