So Ive got this 40g tank, no co2 and ok lighting. Gravel bottom. What live plants would do well AND grow quickly? (all plants are fake atm)

Anubias, Anacharis, and Hornwort would be good.
 
Since its no co2 , go with flourish excel ( or the diy alternative)
Java ferns are a great option for a non fertile substrate tank.
In case your livestock don't dig up the substrate go for ada aquasoil substrate. Even without co2 it makes the plants grow well.

Java fern grows painfully slowly, ime.

In addition to the plants Ben recommended, I would also suggest Java moss, rotala, and and amazon swords. I'm having pretty good success with all of these species in two of my tanks, with low light (2-2.5wpg) and no CO2, although I do have fluorite substrate.
