Don't you have to give the butterfly fish away after it eats all the aiptasia? Also make sure it's a real peppermint shrimp or it might not eat them at all. Some stores sell other shrimp as peppermint.
 
MMan she could at lease went with a maroon clown fish, There way better. My friend and i are soon to be breeding maroons, But back to the subject, A little more life rock wont hurt it any, i wouldnt think so at least. Good luck with your salt tank.
