It looks like the D3100 was a good choice (between the D3100 and D500 at least). At $539 I think I got a really good deal. I ended up with a brand-new unopened camera in the end, too - the "open box" camera turned out to be missing stuff, so I complained a bit and they traded me straight across for an unopened camera.
I am definitely planning on getting a flash (most likely the SB-700, as it is available locally at Best Buy and they price-match) and an SU-800 flash commander as soon as I can afford it. Then I will finally be ready for some serious aquarium photography!
