You overlooked the fact that the OP already used the established filter media to instantly cycle his tank. In this case, I'd continue monitoring the water parameters even if the cycling was done this way. I disagree with your suggested option to use the fish as a means of indicating whether the water quality is okay or not, and using the old water in that tank as well. Old water is useless. There is little or no bacteria harboring the water column. The old water was just added for nothing at all.
