What are some plants that require the lowest maintenance, submerge them and watch them grow type of thing?

Anubias... Although the watch and grow part can be painfully slow...

Thank you much

Yeah, anubias is one, but also java fern, hornwort, and lastly duckweed from what I have read. Duckweed sits on the top and will grow like a weed, but you can just scoop it out when it gets overgrown. Just make sure you want duckweed, because it is hard to get rid of from what I have heard.

wisteria, ludwigia repens, vallisneria, anubias, apongetons, and dwarf sags. all relatively low light. I have a single fixture aqueon t8 floramax for my 10 gallon. and that bulb is extremely low light. My plants do well.

Though i do you root tabs, and a co2 generator made from yeast and sugar.. its a shrimp tank. my shrimp do not produce enough co2 and waste for the plants to get sufficient nutrients. If you have fish or tropical fish or even 1 giant monster it will produce more waste and nutrients than my shrimp for your plants to grow! please specify tank size and stock for better help.

So would it be a good idea to get root tabs?

Tank specs:

55 gallon, standard light (whatever comes with the tank)

Gravel

A solo piranha

I bought anubias nana and amazon swords.

Good beginner plants? I read a bit about not covering the rhizome and the crowns. Should I purchase root tabs and place one under all of them??

Would the root tabs be potentially harmful to my fish?
