I've got some left over roast beef (3/4lb) and some mequite roasted turkey (1/2lb) and i was wondering if this would be okay to feed my fish???
 
No, I wouldn't feed them anything cooked for one, and secondly any spices on the meat could be harmful, as could any hormones that are in it.
 
Packed with nitrates, leave it out.

Everybody's giving reasons, so I might as well add to my response. Most fish have difficulty digesting mammalian fats. Preservatives as well. If you drop a piece of lunch meat into a glass of water, you'll see the oil slick form on top.

I have another question... I've heard of people feeding hot dogs to fish as treats; I've also heard hot dogs are very high in nitrates. Does this mean hdogs are bad for fish?

Hotdogs use the same preservatives that lunch meats do. Also high in nitrates like you said. Some people on the boards (fewer than 5 I think) use hotdogs as treats, but I would not recommend it. On a sidenote, you can search youtube and you'll find a neat vid of a lungfish taking a hotdog.

Also an idiot trying to get a lungfish to bite him. Ah, the wonders of the internet.
