Is it possible to feed a fish a lot of food, so it has plenty of nutrients to keep growing? I'd love to have a betta that was like 10in.

You will never grow a betta to 10" through excessive feeding. The advantage of feeding a betta good varied food will be seen in color enhancement of the fish. Betta breeders have isolated the size gene and have been growing what are called Giant Bettas. The body of these fish get up to 4, maybe 5". You can buy them but you will have to lay down a couple hundred dollars or more.

to each their own...some people find those prices very reasonable for something they like...others might think paying a few hundred dollars for a datnoid to be insane.

And its possible to make certain small fish big. It is called power feeding, where fish are fed to the belly to optimize growth rate. However most people who do power feeding forgot the subsequent step, which is power-cleaning. Thus their water quality degenerate quickly as well.
