All fresh water eel are fine...don't know where you heard they have skin toxins - but they're commonly used as sushi, especially the common brown eel.

Mata mata and giant headed asian turtle are next on my list of critters to get.

Old post, but Ill bump it. All of the Anguilla genus eels have toxic blood, but the toxins dissolve with heat, that is why unagi (sushi eel) is smoked, not raw.

Forgot about the post but yes you got it, they do have ictiotoxins that are heat sencitive
