If you are actually consulting structural engineers, as your sketch indicates, they should address that question based on tank height and the actial dimensions of the windows. It will be very thick, like 3 to 6 inches depending on whether you split it into several panes, or have one large pane.
 
Assuming your window is 96inches (2450mm) by 96inches per your drawing, cyro's thickness calculator recommends 3.6" with a closed top, 5.6" with an open top.

WOW. That is going to look great. Nothing like a natural rock background.

I hate to think how much that acrylic is going to cost though...
 
It would be my thoughts just from looking at the pics thus far that the cost of the window material will not be an issue
