I think you'll find that the definition of results is going to vary greatly among hobbyists. As an example, very few hobbyists seem to focus on areas such as total digestibility of the feed, disease resistance, or even longevity.

Sometimes only results in overall coloration of the fish seem to be the main focus, others seem to focus more on growth, and others both growth & color. IMO there are a lot of things that need to be factored into the equation when comparing the results of various foods.
 
When comparing foods, do you compare the % protein, fat, ash, etc. as well?

Absolutely, but again, that's only a portion of the overall equation, as % protein is basically just a nitrogen reading taken in a laboratory. The crude protein % does not tell you a whole lot about the quality of the protein, only the quantity of nitrogen. The value of protein is directly related to amino acid content. It doesn't tell you how that protein was processed, or if it's even in a form that your fish can properly utilize.
As an example, the feathers from slaughtered poultry are used to make feather meal, which can be as high as 85% crude protein.
