Most productive feeders in a 180 gallon.

Breed feeders in the 180 for other fish in separate tanks.

Ok then I'm guessing there will be no other big fish in the 180 that would eat the fry, and in that case for cons 180 is an overkill. I first bought 3 pairs of cons for my 200g and they were constantly fighting and it was obvious their breeding territories were overlapping so the most u could have in there is 2 pairs, but u can have 2 pairs in much smaller 2 tanks.
Guppies, mollies and livebearers similar to those are a possibility. As for ur fear of the fry being eaten, all u have to do is set up the tank with lots of tall plants for the fry to hide. U could add with them shrimp or crayfish like someone suggested. The goal would be to have many breeders to produce a large quantity of fry.
Another solid option is breeding large cichlids like bottles said, like Tilapia and Jaguars, which produce a large number of fry in one batch. There would be hundreds of fry.
I will also suggest breeding colonies of Neolamprologus leleupi of Neolamprologus brichardi complex. U could have a large colony producing a decent number of fry in a 180. Set it up with lots of rocks and u could have a nice tank to look at as well.

I'm thinking the marbled crayfish (self cloning) for the bottom with pvc hides stacked up for them would be ample space in a 6 foot long by 2 feet wide tank. The amount seems almost endless!

I think the guppies or mollies would be good for the top/mid level.

Do mollies swim near the top like guppies?

My only thought would be if the fry of either fish would swim down for whatever reason and get eaten by the crayfish constantly.

Could I just float alot of fake plants for the fry? Or perhaps silicone plants farther down like mid level for the fry to hide in?

Where do the fry normally congregate? Top...wherever there is a place to hide?
 
Fry normally congregate on top so floating plants, either real or fake would be best but the will hide wherever there is places to hide so the more the better. U could put floating plants and anchored plants for best survival rate, but u have to make it a thick cover. U could even add branches and other stuff for cover.
And yes mollies, swordtails and most livebearers occupy the upper half of the tank usually.
