I would say if your looking for striking I’d go with a breeding pair of carpentis, here’s a pic of my old male, he was about 4-5 years old when I got rid of him and he was 8inches

Youve already got some great suggestions. Macaw cichlids(hypsophrys nicaraguensis) are some of the more "striking" cichlids i know of that meet your criteria.
While you have to have a specific taste for these, you could go with a single flowerhorn in a 100 gallon. While they aren't the most attractive fish physically, their colors can truly be spectacular. I personally love the color of the Thai Silk versions, but there are many different variations to choose from.

Saxitillia species on the other hand are a good colorful medium sized alternative, but I don't know about their care or behavior too much
