Gah, I am going to have to stress out my guy more. Maybe I can put him in the entryway so he freaks out every times someone comes over. j/k 
I have never heard that a non-stable dat is one that is stressed. Strange I did see a very stable dat at the LFS. He was one of the smaller ones, and definitely NOT one of the dominant ones, or a good feeder (looked hungry).
