The sheets are extruded polystyrene sheets.
The green foam is standard expandable insulation foam, "Great stuff", in US. Polyurethane foam.
Many makes, some are yellow or white and others are green.

Learning to do these has been a longish process, with lots of trial and error with materials. But in the end it's just looking at how things look like in the nature and three-dimensional copy-paste...
