OP, here is what you will be expecting if you take the maggot route.

A nice skull, I would say.

But I would have my fish kept with flesh on. If your bichir is still in the freezer you can dip it in 10% formalin solution (9 part water to 1 part formalin) for a few days. You can also inject small amount of pure formalin along the bichir's body. After it's fixed with formalin, you can preserve it in 70% ethanol.

You could also place it in an ant mound, they would quickly take care of all the meat and leave the bones for you
