Welcome to mfk! Love the clown loaches..
the aquascaping is nice too.. but i would get rid of the pink plant.
It looks a bit unnatural. :)
 
I have done planted in w/an undergravel... the ugf rocks you are just going to need a larger gravel bed with finer gravel... oh yeah and the parrot's are going to eat a lot of plants try anubias and connect it to a piece of bog log with a rubberband and the roots will grow around... it doesn't need a lot of light and it is waxy so most fish won't eat it...
 
Getting rid of the pink plant is out of the question- my girlfriend picked it out...

As far as the fish go, this tank has only been up an running for about 5-6 weeks so I'm trying not to shock it with too many fish right away. There's 2 blood parrots, 2 clowns, 1 firemouth, and one small Managuense.......I know all of these guys get much bigger with time so I don't really know if I should put any more fish in there until these guys outgrow it and get sold/traded out.

The managuense is an illusive little dude...not as coorperative as the other when it comes to taking pictures...
 
Let us know if you manage to kill the rocks, I used to go to gem and mineral shows and pic up large smoothed specimins of snowflake obsidian, sunstone, low grade amythest, tigereye, etc, to drop in my tanks, a few chunks of tigereye really show up on dark gravel.
You could use shallow bowl set into the gravel and containig a peat plug to grow some sagittaria. It worked for me over a ugf. Don't dye them pink though.
