Sometimes floating logs also really help to take away shyness.
Since in nature birds are some of the major threats to fish, hiding under logs (but in plain sight to you) is (I know this sounds way too anthropomorphic) reassuring. I put floating logs, with pothos embedded, and the cichlids spend lots of time under, and among the roots.
The pothos also slightly reduces nitrate load.

I have pothos near the top of my tank as well, but do the logs sink over time?

Perfect example above in dan5i18s post of how to use shade, floating plants piles of rock, and wood to make cichlids feel safe. Although open in the middle, "large" shaded area in the corners offer protection, and place the fish are familiar with and know they can escape into.
 
Depends on the type of wood whether it will sink quickly, or take years.
I don't know which types will sink readily, other than many of the heavy tropical woods do quickly.
The floating log in my photo had been floating for years.

I bought a school of tetras and some "cover" plants and added somemore driftwood into the tank.
I will take a photo of the setup later when the tank lights come on. :)

How bout food?

He is kind of a light eater. As i mentioned earlier he eats on and off a couple of days. I read that these fish are mostly herbivores so i feed him the hikari sinking green pellets.

For a few days he will eat them, then next few days he will seem disinterested. I feed him algae wafers too and its the same results. He is also not interested in bloodworms.

Anything i should try?
 
I'm surprised yours is shy but all fish are different. I have a 6" male in a heavily stocked 180 with alot of larger veijas and c/a's. He can be pretty aggro towards my larger fish. As for food mine loves kensfish.com omnivore drops there a little messy but he goes nuts for them he also likes kens cichlid pellets. I've tried alot different foods with it because it's a picky eater, it would eat but not alot. Since I got these pellets and drops he eats till he's fat lol
 
I feed my bifasciatus northfin veggie sinking formula, personally like the product and the results I am getting.
Might take your argentea longer to get over his shyness as he is the only cichlid in the tank but get the cover set up and the dither fish in, then give him some time.
