Check out this list from Aquatic Plant Centrals plant finder. These are all low light species that are easy to grow and still look great. You could still do some medium light species and they may grow slowly but will still look great.
One thing I would do is look around on the their for sale/trade forum and find someone selling plant bundles. When these guys trim their tanks they often sell the clippings for dirt cheap. I recently bought a bundle of clippings for $20. It contained 13 varieties of plants. I planted them all and all but one of the species are now growing great. By doing this you will get a great mix of plants. The plants that survive can then be propagated in your tank and if you lose a few it is no big deal.
