I wouldn't take it personal. I have a choc that looks similar. She's ugly as sin but one of my fave fish. She looks older than she really is...or who knows maybe she's older than I think she is, but she has the same overgrown head and similar slim figure. I know she could eat more, she's quite picky though.
I have no way to tell whether or not your fish ate fine. I can take your word for it. Based on it's appearance and sunken belly it just looks like it didn't eat enough. Maybe it couldn't, if you acquired it in that condition. Healthy nics don't look like that.
I checked it out on google and it kinda does look like a Nicaraguan. And based on the pics, i can see why Straitjacketstar would say its underfed. The thing about my fish is it looked like it was literally "man-made". Like someone took the head of a parrotfish and stuck it onto a much smaller bodied cichlid.

If it looked like that when you got it then obviously you had no way of preventing the fish's emaciated appearance and there's no guarantee that a fish will recover 100% once in better hands.
