Need plant help/ideas: I'm a beginner

The toughest plant is Anubias which is basically bullet proof, tie it to your driftwood or a rock for best results, roots exposed. Java fern everywhere always looks nice and is easily maintained. If your amazon sword is doing well, try Rubens, brazil, watermelon, and other swords.

Looks like you got some type of crypt from your lfs, they're pretty hardy. As far as moss, you could try java moss growing off your driftwood. What's the lighting on the tank?

4' marine land LED. I'm not sure about specifics though.
 
I just invested in a medium size marimo ball and I love the way it looks and my fish will pick at it every now and again, it isn't exactly what you are looking for but it sure would look cool in that tank.
 
In your first picture the bush plant (looks like water sprite) is planted a bit too deep. You want the roots buried in the substrate, but the crown of the plant should be just above the substrate. Your anacharis would look better planted in a bunch rather that as single strands. However, once the anacharis starts to grow you can trim it and plant the cuttings closer together to produce a more fuller look.
