Wow these are all great responses, thanks everybody. I think I'm going to replicate what I'm trying to do with a 30 long, I'll build a mini sump and add the dehumidifier water, run co2, and see what it maintains for a ph. I'm not worried about any chemicals or contaminants with the distilled water, just having the water too perfect is a bit of a concern. There will be no dissolved minerals, or any type of buffer.
Never kept discus, please help.

that's why you should really buffer it. You are planning to plant the tank and add CO2 injection. This could crash your pH
I have never heard of fish being stunted by too large a tank, lack of food, poor water conditions, over crowding yes.. Too large a tank, I don't buy it.
only if they can't get to the food. Either through competition or in very small fry if they are not able to swim to the source of food
