New 75 gal. Set Up

So the tank is cycled... I think. Having a few issues though:
0 ammonia, 0 nitrite and 0 nitrate. Odd, right? Ammonia and nitrite spiked and nitrates were up there as well... I have done a few water changes (10% a week maybe?). I was suprised to find 0 nitrates this am though... any ideas?
I can't get the ph to 7.0... it's constantly running at 6.5. I've never had an issue with ph in the other tank. I have been using pH up and a pH bufer, but nothing... Don't think it's the background as the Drylok cured for about 2 weeks prior to seeing water. The only other variable is the branch... forget what it is, but it's "aquarium safe" from LFS... I'm taking a wait and see approach.
I have 9 giant danios and my smaller midas in the tank now (been in for about 2 weeks). The midas isn't eating and gasping at the surface. I expected that during the cycle, but it's been 24 hours and my numbers are good... Any suggestions?
