Hang a mirror outside his tank for ten minutes or so if you want to see him go nuts haha. It will reinforce his dominance and improve color and head size. He's not a water head but you should see some improvement.
 
thanks I keep forgetting to get a mirror every time he goes crazy over his image on the phone though. 8 bucks he's pretty cool for my first flowerhorn keep the water level low to top glass. Really aggressive feeder!

It doesn't need to be anything fancy. Lean an old compact disc against the side of the tank and see if he goes for it.
 
Add a decent amount of large, dark rock or something to the substrate if you want the color to pop a little more too. I say large because it's easy to pick out larger pieces of rock if you end up not liking the way it looks. Your substrate is really light colored and it influences your fh to have lighter colors. Thats just a suggestion if you want to see what his color can be.
