They are fairly nice I used to have one and he'd eat out of my hand. But make sure you feed them well but not too much. Mine was good with everyone in the tank until I didn't feed him for a week. Then he ate a couple smaller fish

The Senegals are a little smaller and tend to chill out a little more I think the blue rams should be ok as long and the tank is not tiny and they have a place to hide if need be. Get a few the rams are schooling fish so they like

Polys aren't really sensitive to water. As long as you do your water changes and keep the water from 78-82 degrees you should be fine.
 
yours is a bit small for that. Once it gets to the 7-9" range then you look at the anal fin and if it is male it will look really dense. if it is female it will look like it looks like right now. But just cause it look female now doesn't mean it's female all baby polys are born looking like females.
