It may help with their color but they either have a lot of freckles or don't there is nothing we can do to increase them that is all up to genetics and the particular fish

Genetics yes, this brings up an old debate.. genetics vs nutrient. Yes Genetics plays an important factor, but so does nutrient. I have been a hobbyist for over 20 years... New and Old World cichlids and Nutrient/diet does play an important factor of color.. size and shape.
I agree with all you said but, you cannot increase freckling with food. Look at the general for instance. Jason I'm sure took great care of him fed him quality food and did large water changes. And yet his freckling didn't increase. All the freckling that the fish has will show up better with good care but it will not grow more freckles just showcase great colored freckles that it already has. I think we are both saying the same thing I am just clearing it up for people who read this thread that may not. Great care will ensure your fish looks his best but if it doesnt have the genetic material and already carry the traits no matter what you do I won't change what the fish is.
The opposite is also true that a real high quality fish can look like crap if abused. You have a high quality fish that you are taking great care of and it will showcase every bit of potential it has with continued great care. How ever if you had a low quality fish nothing you can do will make it better than it's genetics. You may make it a better fish and improve it but it will never be a showstopper like one with strong genetics. Sorry enough rambling I really like your umbee!

I also noticed that one of my umbees that had very bright red on cheeks and prominent freckles, but a couple inches bigger his freckles and red are not showing as bright. Can umbees freckling be alter by mood or etc. I take really good care of them feed them high quality food and keep my nitrates under 15.
in mime their freckles are always very blue bright and always promiment.

Oh yes mood play a big part. It isn't as immediate as their body color but they can fade if stressed or overexcited for longer periods of time.
