Feed them a range of foods once they are 2-3+ inches but for now if he's smaller just use small pellets. I use hikari gold bio+ and new life spectrum as that is what I would suggest. Once large enough, I would feed him feeder fish (on occasion as they can carry diseases), insects like crickets, prawns, and other foods they eat in the wild. Dovii are a carnivorous and smart cichlid so treat them every now and then but keep them on pellets for the most part. In case this matters MAKE SURE he is pellet trained. The earlier the better.
As far as temperature goes just keep it in the 74-80 degrees Fahrenheit range but I keep mine at 78.
For filtration, make sure you gotta lot of it. In my 150, I'm running 2 fx6's in it. When I kept mine in a 55g when he was tiny, I had 2 emperor 400's on the back. These guys can be messy, but if your lucky, like me, yours won't eat his food like throwing chum in a fan then pooping it out having explosive diarrhea. Luck of the draw I guess. My point is whether they are messy or not, make sure your filters can handle 4x (at least) the size of your tank in gallons per hour as that's my rule of thumb.
Tank size, I'd say 220 for an adult. Mine is 5 inches so I can get away with a 150 but I'm upgrading before he reaches 9 inches. I recommend a 6x3x3 or somewhere in that range
