I know the basic fix for high nitrites is to do water changes. My question is, is there something wrong with nitrite reducers that you can buy in the store? I mean, I can see how water changes is simple, free, plus needed for weekly maintenance anyway but still, if a sudden nitrite spike arises should I avoid the stuff in the store?

water change is for nitrate

bio filters are for ammonia and nitrites

I agree, it may be that you are confusing nitrites with nitrates.
