Could someone name a cichlid that will do good in this tank:

2 platinum gouramis
1 gold
1 dwarf
1 green cory
1 pileatus cory
1 clown loach
1 rainbow shark
3 sunburst platies
1 small african knifefish
1crayfish
1 fiddler crab
1kribensis

29 gal

I wouldn't put an angel in with these fish. You will wake up one morning and find some fish missing. Then oneday you will have very few left. Rams are possibly your best bet but as said, your rainbow might give them a hard time. Be careful about the water conditions as these are quite different for most of the Rift cichlids.

Can we think similar, proper water chemisty for these fish he's supposed to be mixing, people? Tangs require very hard water and a very high pH level (8.6 or above), which clearly won't work well with most of the fish he's already got listed in this tank.

yes the tang cichlids will need hard water but after generations of being bred in our water most can adjust unless he plans on breeding. If you look at it the knife is hard water too. he still has to remove at least four current occupants possibly a fifth. We have to consider that most fish are no longer wild caught.

As stated above, African Cichlids should not be kept with other Tropicals. Period.
With the exception of Tanganyikan shell dwellers or maybe a small group of yellow labs, African Cichlids will out-grow a 29 gallon tank in very short time.
