You should grow one out and right before harvest only feed it fried catfish for a while, see how it tastes. lol

If I were to grow one out I might eat it but it certainly wouldn't be getting any fried catfish.

well they do grow rather thick, but I still think at 10-12in. it'd be a little small to eat. However I would imagine some one has probably eaten them.
