Chocolate Waffle Cookies

1/4 c butter, softened
6 Tbsp sugar
1 egg
1/2 tsp vanilla
1 oz (1 square) unsweetened baking choc, melted
1/2 c flour
Powdered sugar

Cream butter and sugar til light and fluffy. Beat in egg and vanilla. Blend in chocolate. Add flour, mix well.

Drop by Teaspoon apx 2 inches apart onto a preheated waffle iron. Bake for 1 min. Cool. Dust with powdered sugar.

NOTE: I did Tbsp and baked for about a min and a half, I got 16 cookies. Its supposed to yield 18...

Coconut Chocolate Chip Cookies

Ingredients



  • 1 cup butter, softened
  • 1 cup Granulated Sugar
  • 1 cup packed brown sugar
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2-1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2-2/3 cups flaked coconut
  • 1 cup (6 ounces) semisweet chocolate chips
  • 1/2 cup milk chocolate chips
  • 5 ounces white candy coating, coarsely chopped, optional

Directions



  • In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda, baking powder and salt; gradually add to the creamed mixture and mix well. Stir in the coconut and chips. Shape 3 tablespoonfuls of dough into a ball; repeat with remaining dough.
  • Place balls 3 in. apart on ungreased baking sheets. Bake at 350° for 12-18 minutes or until lightly browned. Remove to wire racks to cool.
  • In a microwave, melt candy coating if desired; stir until smooth. Dip one end of cooled cookies in candy coating. Allow excess to drip off. Place on waxed paper; let stand until set. Yield: about 2 dozen.
NOTES:

I skipped the jumbo bit and just scooped them by the Tbsp full onto the cookie sheet and baked them 18 mins at 350. I got 4 dozen cookies out of the batch doing it that way. Oh, I've never made these before and they are freakin amazing! :thumbsup:

How to cook a moist turkey and do it quickly. Cut up turkey - two wings, two legs, and breast. Use the rest for soup. Place wings, legs, and breast in pan. Add seasoning. Cover pan tightly with tinfoil. Cook in 325 degree oven until done (usually 2-2 1/2 hours). Try the recipe and stop eating dried up turkey.
 
SHE'S AT IT AGAIN! :nilly: So far my moms made the roasted cinammon pecans and the chocolate brittle is in the oven. Next up is the best of them all... the caramel hard candy stuff (idk what its called...) pics uploaded soon...

She's getting a late start, ain't she? We had all our baking done yesterday so we could keep the oven open for the bird and sweet taters and stuff...
