I would do a larger pair of cichlids in the 90g (8-12" fish) and a medium pair of cichlids in one of the 55g (4-6" fish). The other 55 and the 20s would be used to raise fry. Once you sell a good amount of fish, you can use the money to expand your tank collection.
I would aim for cichlids that are good parents that will raise their fry well for the first several weeks. Cichlids do a great many things that make it easier for a breeder. They will eat bad eggs, keeping the breeder from having to tediously remove them. They will cull the weaker fry (not all cichlids, but many of the good parents will). There are some downsides to allowing the parents to raise the fry, but in my experience, the resulting fry are very good and strong. Make sure you choose good looking, healthy parents. Don't breed if the parents look weak and don't allow the parents to over reproduce, which will cause the female to become too weak. A weak female will produce weak fry and can die of exhaustion or not be able to defend herself or run if the male starts terrorizing her.
As for species, I would go with something that is eprelatively easy to breed, but not too common. Otherwise you will be selling fry for super low prices and not making enough to really move forward. If you are going to contact Jeff, try to find something he is not breeding. You are in the same state and may be stepping on his toes by breeding the same thing he is in what was originally his territory. Kindness in this hobby will go a long way.
