Use cut egg crate around any filters or intakes. If there is a will and a way a determined poly will find it. Many of us on here have lost a " jumper". Don't join this club.
Yes they can splash and make alot of noise at night as they get bigger. Endlies are known for being loud breaches, I have a pair of 20+ endlies and i hear some pretty big crashes , i worried at first that it was my arowana hitting the lid so i sat in the dark and watched the tank one nightand it was just endlies they are MUCH more active fish at night and very loud as they come up for air.
However what you described where he was hovering at the surface then lunging at the lid , that behavior would be an escape attempt. In my experience bichirs especially the low jawed ones only try to escape if something making them uncomfortable in the tank. It doesn't sound like it's a tank mate picking on him, but watch carefully I've had little dat's drive bigger fish insane at night , they are quite aggressive and much faster then most others. It wouldn't likely be able to do any harm, none of those tank mates could really do much more then annoy a larger endlie but annoying him might be enough to cause him to try and escape.
I would also test all the water parameters. If everything checks out then I'd test the Tap waters PH/KH and compare it to your tank waters PH and see if perhaps a recent water change cause a PH swing.
would help to know a few things to narrow down a cause...
How often do you do water changes , and how large each time ?
What temperature are you keeping them at , and what is the PH/KH.
How long as the tank been running,and how long have you had the endlie ? When and What was the last fish put into this tank ?
I missed this post, If this started after the change stop using the oak and see if that's the cause.... also why are you using peat or oak extract products in the first place ??? None of your fish are soft water fish in fact most of your stock will enjoy a higher hardness/ph not lower one.

Here i have so hard water that i mix it with RO water - even then ph stays way over 7 so i need to add oak or peat to lower ph... My parameters are ph 7, KH 5 and GH 7.. (trying to get an optimum to most sensitive fish in tank - that is BGK)
I do wc twice a week about 15% each time
I have endli since the end of january this year.. The only one who bothers him is little ornate who probably thinks endli is his mom/dad, i dont know endli just bite his tail to go away but usually ornate is quickly behind him once again (when endli goes under another root, ornate leaves him alone)
Well seems he calmed down a bit- two nights without splash, just cruising around like arowana
Lid is secured, no hole to escape, intake is secured but he is too big to go in (but ropes could go)..
I will provide some more hiding spots, mix decoration a bit,..

A month later, everything is fine he didnt try to escape anymore, resting on bottom, peacefully cruising at night..no splashes.. i changed position of roots so endli is under big one, ornate rests on top of the same root..seemed ornate drove endli crazy by constantly following him
