I've only noticed the twitching when there was fry present. I'm thinking it has something to do with communication to the fry or the parents are trying to keep the fry from eating too much slime coat.

It happens both during breeding, when fry are present and also when fish are posturing for position. It's been speculated that the fish is actually grinding their pharangyeal jaw....to make some kind of an audible noise underwater. You can fill in the blanks as to why...call to feed, warn to back off, impress the mate....but I have seen it from every fish from Convict to Umbee. If you look at the video I took of the managuense where I documented the "glancing" (feeding on slime coat) you can see it at a much more emphasized manner...actually snapping their jaw to call the fry in as they laid motionless at the bottom of the tank for the fry to feed.
