My monos were starting to show their coloring when I got them at about 6". However, at that time, it was hit and miss. Sometimes they showed good color, othertimes not. Once they hit 10" the color really started to stablize and now they are always showing color.
 
Ya, 6"-10" mark is usually when they will start to mature and their colors relly start to show! Every fish is different and some mature quicker or slower....
 
By the time they are a foot long you should have a good idea what mood they are in by their colors. Mine usually stay a nice bright green with light black bars, unless they get mad, and then their bars get really dark, and their spots come out just above their belly.
 
6"-7".

They are pretty dull until then.
