Just too bad el paso doesnt have a big variety of fish :(
I really wish more ppl were into it here.
You have nice native fish though, Texas cichlids. Probably not a common pet there though.

Technically it's a Astronotus ocellatus

Common name wise, Lutino is a color morph in all animals where it's normal coloration is changed to white.
Your fish are one Lutino tiger, due to the black in the fins and eyes. And possibly one true albino tiger due to the still red eyes at 4in plus.

A true albino has red eyes and no coloration besides pink in the body/fins.
Lutino often are called albino because they are white.
The orange is not from them per say. It's a product of light refraction and the scales.
