is this a speckled pavon? and if not can u catch big ones like this or no?

Speckled Pavon is another name usually associated with Cichla Temensis. The fish in the picture is not Temensis. I don't know what they are. No Temensis here and I have not seen the likes of the fish in the picture in local waters. Sorry....

The PB in South Florida could be evolving. The fish in the Picture looks much better than the ones I gather and catch.

Although many folks here refer to local PB as "Butterfly PB", they do not look anywhere close to the "Butterfly PB" found in South America which have big spots in the middle of their bodies instead of Bars(wide stripes). They look more like the fish in your picture but without the speckle like coloration. That fish could be Ocellaris with color expression adapted to the location they were caught in. Just my 2 cents.
 
The fish shown in the picture that has speckled spots is called a Cichla sp. "Venezuela". Pictures were found on the net with the credits.

No Vince... there are no Orinos in Florida.

JuanTamad is right. They are a color variation that ocellaris get when they hit around the 12" mark. There are only ocellaris and ocellaris/mono highbreds in Florida.
